History
Chef Jeremy Esterly started Phat Sammy’s as pop-up dinners in Huntsville in spring 2017, then opened a permanent tiki bar and Asian-fusion restaurant in a basement at 104 Jefferson Street in March 2020 with co-owners Nick Quinn, Jeremy Concepcion, and Josh Beverly. The speakeasy-style room, marked by a glowing pineapple, became a downtown hangout for cocktails and late plates. In February 2026 the bar announced it would close for good after Valentine’s Day.
